A sharp knife is your best friend in the kitchen or the wild. We’ve created the infographic below to give you ten ways to make your blade so sharp that you’ll be scared to pick it up!
It’s not good enough to only sharpen your blade when you think about it. To keep a devilish sharp blade, sharpen it every time you use it
The best cutting blade has shallow angles on each side of the cutting point, so make sure to angle your blade just so against the sharpening surface
As chef Gordon Ramsay says, you need to be really comfortable gripping your sharpening steel to get the best results. Hold it like you would hold a tennis or squash racket.
You need to have the confidence that your knife will cut cleanly no matter what part of the blade you use. Make sure to sharpen from the bottom to tip.
To avoid uneven sharpness along the knife, every pass of the blade over your whetstone or steel should be flowing and smooth: use the same speed for the whole stroke
One of the best ways to bring all of these actions together is to imagine that you are trying to sharpen your steel to a point with your knife. This will make sure your angle and speed are right and you sharpen the whole blade
To make sure you have a balanced, symmetrical cutting edge, sharpen both sides of the cutting edge alternately. i.e. top/bottom, top/bottom, etc. Too much top or bottom will get an unbalanced blade.
Honing oil is a type of mineral oil which lubricates the stone, so it’s easier to pass the knife over it, and keeps the filings from blocking its pores. (Don’t use oil on a carborundum stone though!!)
Whetstones generally have two sharpening sides, one rough and the other smooth. Begin with the rough side to remove any burrs, then swap to the fine side to hone your blade to a devilishly sharp edge
Just five to ten passes of each side of your blade against the whetstone or steel will be enough to maintain a dangerously sharp edge… so long as you remember to sharpen every time you use your knife.
